Quick question, if I was to add my GC3 as secondary controller to my SmartThings hub would the ST hub be able to “read” the GC3 sensor data? i.e. would ST show all my door/window contacts and the current state (open/closed)?

No, alarm panel sensor data, once gathered by the panel is not shared via any other means than secure communication with the ADC back-end.
The Z-wave radio cannot provide sensor data and vice-versa.
